In a KitchenAid stand mixer bowl, add the yeast and half of the sugar (1 tsp) into the warm water. Mix thoroughly and then cover it with a kitchen towel and set it aside for 7-10 minutes.
In a separate mixing bowl, combine the flour, sea salt, and the remaining sugar (1 tsp). Mix thoroughly.
Using a KitchenAid mixer with a dough hook on a low speed, slowly add the flour into the yeast mixture, and allow it to form into a dough. This will take approximately 10 minutes of mixing.
Once the dough has formed, knead it on a floured surface and form it into a ball.
Get a clean medium-large oven-safe bowl and lightly brush it with Martelli Extra Virgin Olive Oil. Put the dough into the bowl and brush the exterior with olive oil to prevent the top from drying / cracking.
Put the dough in the oven on the PROOF setting for 2 hours. If you don’t have this setting, heat your oven to the lowest temperature, and then turn it off, and put the dough in the oven. When the dough is finished, it should have doubled in size.
Preheat your oven to 450 degrees Fahrenheit.
Knead the dough on a floured surface, shape it into a 12 inch circle, and form a crust.
Top your pizza with Martelli Pizza Sauce and fresh grated mozzarella pizza. Bake for 12-14 minutes or until you’ve reached your desired level of crisp. Remove the pizza 1-2 minutes before it’s finished and add your fresh basil, then return to the oven.
Cut into 8 slices and enjoy!
