Martelli 00 Pizza Dough




  1. Into a large bowl add the yeast, sugar and water. Mix and allow to sit for a few minutes until it becomes frothy. 
  2. Add the flour, salt and olive oil and mix until a shaggy dough forms.
  3. Transfer the dough onto a floured surface and knead for a few minutes. Add more flour as needed if the dough is too sticky.
  4. Form dough into a ball and transfer to a lightly oiled bowl. Cover with plastic wrap or a tea towel and leave it in a warm area to rise for a few hours. The dough should double in size.
  5. Punch the air out of the dough, transfer onto a lightly floured surface and knead once more.
  6. Roll out your pizza dough and add your tomato sauce, cheese and prosciutto
  7. Bake at 450 F for 15-18 minutes. Finish with fresh arugula.
