How to Make Homemade Gnocchi

- In a large bowl combine mashed potatoes, egg and 1.5 cups of flour. Knead until the dough is formed.
- Using a bench scraper, cut your dough into 6 equal portions.
- Roll out each portion into long “snakes” and then cut the “snakes” into bite-sized pieces.
- Roll each bite-sized piece along the back of a fork to create a pattern.
- Bring a pot of water to a boil and add 1 tsp of sea salt.
- Cook your gnocchi for 3-4 minutes, until they start to float. Tip: only cook what you are going to eat right away and freeze the rest.
- In a pan, heat 1-2 tsp of garlic cream and coat the gnocchi.
- Garnish with dried oregano and white truffle oil.
