How to Make Homemade Gnocchi

  1. In a large bowl combine mashed potatoes, egg and 1.5 cups of flour. Knead until the dough is formed. 
  2. Using a bench scraper, cut your dough into 6 equal portions.
  3. Roll out each portion into long “snakes” and then cut the “snakes” into bite-sized pieces.
  4. Roll each bite-sized piece along the back of a fork to create a pattern.
  5. Bring a pot of water to a boil and add 1 tsp of sea salt. 
  6. Cook your gnocchi for 3-4 minutes, until they start to float. Tip: only cook what you are going to eat right away and freeze the rest.
  7. In a pan, heat 1-2 tsp of garlic cream and coat the gnocchi.
  8. Garnish with dried oregano and white truffle oil.
