Boil the chickpeas with 1 tbsp of baking soda until the chickpeas have softened (about 10 minutes). Strain the chickpeas and remove the skins to achieve a smoother texture. Tip: you can set a few chickpeas aside to use as a garnish.
In a food processor or blender add: chickpeas, lemon juice, garlic, salt, tahini, water, red pepper strips and blend until smooth.
Add the olive oil and blend again. Tip: olive oil is added at the end to maintain its flavour.
Garnish with fresh parsley and a few chickpeas.
Serve with toasted Italian bread, crackers or veggie sticks!
