Garofalo Sun Dried Tomato Pasta
Ingredients:
- 2 cups Garofalo Fusilli
- 1 tsp Martelli Premium Fine Sea Salt
- 2 tbsp Martelli Extra Virgin Olive Oil
- 1 tbsp Martelli Garlic Cream
- 1 tbsp dried oregano
- 1 cup Martelli Sun Dried Tomatoes (chopped)
- ¼ cup coconut cream (or heavy cream)
- 2 cups fresh baby spinach
- ½ cup fresh parmesan cheese (grated for garnish)
Directions:
- Bring a pot of water to a boil, add the sea salt and cook the pasta according to package instructions.
- Cut your chicken breasts into bite sized pieces.
- In a separate pan, cook the chicken pieces along with Martelli garlic cream and oregano.
- When the chicken has finished cooking, mix in the sun dried tomatoes, coconut cream, spinach and cooked pasta.
- Garnish with fresh grated parmesan cheese.
